Herb Chicken on Romesco Spaghetti

Romesco is a bit of an obsession of ours, so we guiltily let out this herby chicken roasted red pepper and almonds creamy spaghetti.

Ingredients to serve 2

  • 150g x Smoked Chicken - flaked
  • ½ x Onion - diced
  • 2 cloves x Garlic - chopped
  • 5g x Oregano - chopped
  • 1 x Red Peppers - chunked
  • 150g x Cherry Tomatoes
  • 15ml x Tomato Paste
  • 100ml x Tomato Passata
  • 45ml x Cream
  • 2.5g x Paprika
  • 150g x Spaghetti
  • 40g x Almonds
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 300g x Smoked Chicken - flaked
  • 1 x Onion - diced
  • 4 cloves x Garlic - chopped
  • 10g x Oregano - chopped
  • 2 x Red Peppers - chunked
  • 300g x Cherry Tomatoes
  • 30ml x Tomato Paste
  • 200ml x Tomato Passata
  • 90ml x Cream
  • 5g x Paprika
  • 300g x Spaghetti
  • 80g x Almonds
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)


Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220C and Bring a large saucepan of salted water to the boil for use in Step 1.

Washing Instruction

Wash your hands red peppers and cherry tomatoes well. Rinse our oregano thoroughly and drain on paper towel.

Mariella's Tip

Romesco is a tomato-based sauce that originated from Valls, Tarragona, Catalonia. The fishermen in this area made this sauce to be eaten with fish. It is typically made from any mixture of roasted tomatoes and garlic, toasted almonds, pine nuts, and/or hazelnuts, olive or sunflower oil, and nyora peppers.

Step 1 - Roasted Red Peppers and Spaghetti

Once your water in your large saucepan has come to the boil, cook your spaghetti for 10-12 minutes until "al dente" Drain through a colander and set aside until later. Meanwhile toss your chunked red peppers in a large mixing bowl along with olive oil, salt and pepper. Scatter onto an oven tray and pop into the oven for 10 minutes, reserve your bowl as is. Now toss your cherry tomatoes in your reserved bowl with olive oil, salt and pepper. After your red peppers have roasted for 10 minutes, scatter your cherry tomatoes and chopped almonds onto your oven tray and continue roasting for 5-6 minutes until red peppers are cooked, cherry tomatoes have blushed and your almonds are lightly toasted.

Step 2 - Sauce

Heat your tomato paste, paprika and tomato passata in a medium saucepan over medium heat until heated through. Cook for 4-5 minutes, whisking readily, before adding your cream and seasoning with salt and pepper. Once your spaghetti is cooked mix it into your sauce and season with salt and pepper.

Step 3 - Herbed Chicken

Heat a large frying pan over med-high heat, add a drizzling of olive oil and once your pan is warm saute your diced onion, garlic, chopped origanum for 3-4 minutes before adding your flaked smoked chicken. Cook for 1-2 minutes and then taste and season if need be.

To Serve

Divide your saucy spaghetti amongst your servings, top with your roasted red peppers, tomatoes, toasted almonds and herbed chicken.
