Pork Chops, Spiced Butter and Crush

Nothing beats sweet mushy peas and this week we paired our robust deboned pork chops with a garlic sauce, tenderstem greens, and new potato mushy peas.




Ingredients to serve 2

  • 2 x Pork Sirloin Steaks
  • 30ml x Garlic Sauce
  • 80ml x Cream
  • 5g x Grated Parmesan
  • 300g x Baby Potatoes - halved
  • 150g x Peas
  • 5g x Italian Flat Leaf Parsley - chopped
  • 100g x Tenderstem Broccoli - stem end trimmed
  • 20g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 4 x Pork Sirloin Steaks
  • 60ml x Garlic Sauce
  • 160ml x Cream
  • 10g x Grated Parmesan
  • 600g x Baby Potatoes - halved
  • 300g x Peas
  • 10g x Italian Flat Leaf Parsley - chopped
  • 200g x Tenderstem Broccoli - stem end trimmed
  • 40g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Bring a medium saucepan of water to the boil for cooking your peas in Step 1.

Washing Instruction

Wash your hands, baby potatoes and tenderstem well. Rinse your Italian flat-leaf parsley thoroughly and drain on paper towel.

Gino's Tip

A food processor works great for your peas, take half of your cooked peas and blitz them with a bit of water. Don't sweat it if you don't have a food processor you can proceed as per instructions and you will still have the same deliciousness.

Step 1 - Potato and Mashed Peas - See Gino's Tip

Cook your halved baby potatoes in a large saucepan of salted water for 12-15 minutes until soft. Drain through a colander then place in a large mixing bowl and lightly mash with a potato masher, season with salt and pepper. Once your medium saucepan of water has come to the boil cook your peas for 2 minutes until tender. Drain through a colander and in a separate bowl, lightly mash with a potato masher and season lightly with salt and pepper. Once your potatoes and peas are ready you can proceed to gently mix them together along with your peas and chopped Italian flat-leaf parsley.

Step 2 - Pan-Fried Tenderstem

Heat a large casserole pan over med-high heat, add a drizzle of olive oil and once your pan is hot, fry your tenderstem for 3 minutes. Proceed to add a dash of water and cook for a further 3-4 minutes until your tenderstem are just about tender. Transfer your tenderstem to a serving dish and keep warm in the microwave until you're ready to serve.

Step 3 - Garlic Butter Pork

Season your pork sirloin steaks with salt and pepper. Heat a large frying pan over med-high heat, once your pan is hot but not smoking, add a drizzle of olive oil and fry your steaks for 3-4 minutes on each side or until cooked to your desired doneness, transfer to your chopping board. Lastly, add your butter to the pan and once it froths add your garlic sauce, cream and parmesan and heat through until you have a quick garlic butter sauce.

To Serve

Divide your potato and mashed peas amongst your servings along with your tenderstem broccoli and seared pork and garlic butter sauce.
