Solo: Crisp Spiced Chickpea and Streaky Bacon Riso

Crispy bacon paired with tomato cauliflower risotto with cumin, paprika lemony chickpeas.




Ingredients to serve 1

  • 3 slices x Streaky Bacon
  • ¼ tin x Chickpeas - drained and rinsed
  • ¼ x Lemon - zest and juice
  • ½ head x Cauliflower - chopped or grated finely
  • 100ml x DD Mexican Chunky Tomato Sauce
  • 20g x Cream Cheese
  • 75g x Cherry Tomatoes
  • 2.5g x Italian Flat leaf Parsley - chopped
  • 5g x Grated Parmesan
  • 5ml x Honey
  • 10g x Wild Rocket
  • 1.25g x DD Spice Mix
  • 30g x DD Aromatics
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Before you begin, preheat your oven to 180°C.

Washing Instruction

Wash your hands, lemon, cherry tomatoes and cauliflower well. Rinse your wild rocket and Italian flat-leaf parsley thoroughly and drain on paper towel.

When crisping bacon, it's important to allow your bacon time to do just that. Your bacon will start out with extra moisture in the pan but once that cooks away it will begin to crisp.

Step 1 - Crispy Spiced Chickpeas and Roasted Cherry Tomatoes

Mix your chickpeas along with your DailyDish Spice Mix and lemon zest. Scatter onto an oven tray, drizzle with olive oil and season with salt and pepper. Place your cherry tomatoes on an oven tray, drizzle with olive oil and season with salt and pepper. Place your chickpeas in the oven for 6-8 minutes until slightly brown and crisp then sprinkle over your chopped Italian flat-leaf parsley once done. Once your chickpeas are done, turn your oven over to 220°C and pop your cherry tomatoes in for 6-8 minutes.

Step 2 - Tomato Risotto

Heat a large casserole pan over med-high heat. Add a glug of olive oil and sweat your DailyDish Aromatics for 4-5 minutes until soft and translucent. Now add your grated/chopped cauliflower and cook for 4-5 minutes until just about tender. Proceed to add your DailyDish Mexican Chunky Tomato Sauce and cream cheese. Warm it through, taste and season with salt and pepper. If necessary, balance the tartness with some of your honey. Keep warm in your microwave until all your components are ready.

Step 3 - Crispy Bacon

Heat a large frying pan over med-high heat. Add a glug of olive oil and once your oil is hot, add your slices of streaky bacon. Allow them to colour for 3-4 minutes on each side before turning them over. Once done, drain them on paper towel.

To Serve

Dress your wild rocket with a drizzle of olive oil and your lemon juice, season with salt and pepper. Place your tomato risotto as your base and top with your crispy spiced chickpeas, roasted cherry tomatoes, crispy bacon and finish by sprinkling over your wild rocket and grated parmesan.
