Chicken Milanese with Tomato Orzotto

Italian Crumby crispy chicken fillet with velvety creamy swiss chard on a bed of blushing tomato plump rice pasta.




Ingredients to serve 2

  • 2 x Chicken Breast - flatttened
  • 50g x DD Crumbing
  • 150g x Cherry Tomatoes
  • 125g x Rice Pasta
  • 100ml x DD Mexican Chunky Tomato Sauce
  • 150g x Baby Spinach - long or thick stems removed
  • 100ml x Cream
  • 40ml x Sour Cream
  • 1 x Eggs - whisked (from your pantry)
  • All Purpose Flour (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

  • 4 x Chicken Breast - flatttened
  • 100g x DD Crumbing
  • 300g x Cherry Tomatoes
  • 250g x Rice Pasta
  • 200ml x DD Mexican Chunky Tomato Sauce
  • 300g x Baby Spinach - long or thick stems removed
  • 200ml x Cream
  • 80ml x Sour Cream
  • 2 x Eggs - whisked (from your pantry)
  • All Purpose Flour (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Before you begin, preheat your oven to 220°C. Bring a large saucepan of salted water to the boil for use in Step 2 - using a lid will speed up the process. Prepare three mixing bowls, one with your all-purpose flour, one with your whisked egg and one with your DailyDish Crumbing.

Washing Instruction

Wash your hands and cherry tomatoes well. Rinse your baby spinach thoroughly and drain on paper towel.

Milanese - is traditionally prepared with a veal cutlet, it is breaded and fried and served along with spaghetti.

Step 1 - Chicken Milanese

Season your flattened chicken breasts with salt and pepper. Coat in your all-purpose flour, whisked egg and then your DailyDish Crumbing, place onto an oven tray and pop into the oven for 15-18 minutes.

Step 2 - Roasted Tomato Orzotto

Scatter your cherry Tomatoes onto an oven tray, drizzle with olive oil and season with salt and pepper. Pop into the oven for 6-8 minutes. Once your large saucepan of water has come to the boil add your rice pasta and cook for 8-10 minutes until al dente. Drain through a colander. Now give your large saucepan a quick clean, heat your DailyDish Mexican Chunky Tomato Sauce in your large saucepan over medium heat then fold in your rice pasta and roasted cherry tomatoes. Season to taste with salt and pepper and reserve to serve.

Step 3 - Creamy Greens

Heat a large casserole pan over med-high heat, add a drizzle of olive oil and cook your spinach until it has wilted about 2-3 minutes. Now fold in your cream and sour cream, remove your pan from the heat and season to taste with salt and pepper.

To Serve

Place your roasted tomato orzotto as your base, top with your creamy greens and chicken milanese.
