Bacon and Feta Phyllo Pie

A delicious retake on a DailyDish Foodie Favourite with this roasted squash, harissa, tomato, and feta crispy phyllo lasagne bake.




Ingredients to serve 2

  • 200g x Diced Bacon
  • 60g x Feta - gently crumbled
  • 2 x Plum Tomatoes - diced
  • 500g x Butternut Chunks
  • 100g x Baby Spinach - long or thick stems removed
  • ½ x Phyllo Pastry
  • 100ml x DD Mexican Chunky Tomato Sauce
  • 20ml x Harissa Paste
  • 40g x Butter - melted (from your pantry)
  • Salt and Pepper (from your pantry)
  • Sunflower Oil (from your pantry)

Ingredients to serve 4

  • 400g x Diced Bacon
  • 120g x Feta - gently crumbled
  • 4 x Plum Tomatoes - diced
  • 1kg x Butternut Chunks
  • 200g x Baby Spinach - long or thick stems removed
  • ½ x Phyllo Pastry
  • 200ml x DD Mexican Chunky Tomato Sauce
  • 40ml x Harissa Paste
  • 80g x Butter - melted (from your pantry)
  • Salt and Pepper (from your pantry)
  • Sunflower Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Before you begin, preheat your oven to 220°C.

Washing Instruction

Wash your hands and plum tomatoes well. Rinse your baby spinach thoroughly and drain on paper towel.

Alternatively, you could boil your butternut in salted water for 12-15 minutes until soft and make a mash to layer your phyllo bake.

Step 1 – Roasted Butternut - See Gino's Tip

Place your chunked butternut on an oven tray lined with baking sheet/parchment paper. Drizzle with sunflower oil, cover with foil and place in the oven to roast for 12 minutes. Remove the foil and roast for an additional 12-15 minutes, until lightly browned and soft. Allow it to cool slightly and use a potato masher to mash it roughly.

Step 2 - Bacon and Spinach Saute

Heat a large frying pan over med-high heat and add a glug of olive oil and fry your diced bacon for 3-4 minutes until crisp. Add your baby spinach and cook until wilted, about 2-3 minutes. Don't forget to season with salt and pepper. Remove the pan from the heat and mix in your DailyDish Mexican Chunky Tomato Sauce and harissa paste. Set aside till later.

Step 3 - Assembling Phyllo Pie

Mix your diced plum tomatoes with your bacon and spinach saute. Brush your baking dish with a light layer of butter before covering the base with sheets of phyllo pastry. Butter each sheet before adding another one. Now add half of your butternut, layering it over your phyllo base. Add another layer of phyllo sheets, then layer your remaining butternut, bacon and spinach saute and crumbled feta. Cover with your another layer of phyllo sheets, making sure you butter between each layer. Place in the oven to bake for 8-10 minutes until the pastry is golden brown.

To Serve

Divide your bacon and feta phyllo pie amongst your servings.
