Sweet Spiced Pad Kee Mao Noodles

Tom Yum spicy rump and bacon, edamame packed egg noodles a sweetly spiced spin on fusion street food.




Ingredients to serve 2

  • 200g x Beef Mince
  • 50g x Diced Bacon
  • 80g x DD Aromatics
  • 115ml x DD Pad Kee Mao Base
  • 150g x Peas
  • 50g x Edamame
  • 2½ nests x Egg Noodles
  • 5g x Chives
  • 1 tsp x Sugar/Sweetener (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 400g x Beef Mince
  • 100g x Diced Bacon
  • 160g x DD Aromatics
  • 230ml x DD Pad Kee Mao Base
  • 300g x Peas
  • 100g x Edamame
  • 5 nests x Egg Noodles
  • 10g x Chives
  • 2 tsp x Sugar/Sweetener (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Before you begin, bring a large saucepan of salted water to the boil for use in Step 1.

Washing Instruction

Wash your hands well. Rinse your chives thoroughly and drain on paper towel.

Gino's Tip

When adding your mince to the pan, try to crumble it as much as possible and once in the pan, use a whisk or a wooden spoon to break it up into smaller pieces. Let your mince crisp and brown and develop colour and flavour. Bits will get stuck to the bottom of your pan (fond) and can be removed once you're done by deglazing with a splash of water - even better some chicken stock or white wine.....sssshhhh I didn't say a thing.

Step 1 - Greens and Egg Noodles

Once your large saucepan of water comes to the boil, cook your edamame beans and peas for 2-3 minutes until just about tender - remove with a slotted spoon and transfer to a plate. Cook your egg noodles in the same saucepan of boiling water for 4-5 minutes until tender. Drain through a colander and drizzle with a bit of olive oil.

Step 2 - Spicy Sweet Noodles

Heat a large casserole pan over med-high heat, add a few glugs of olive oil and fry your beef mince for 8-12 minutes until brown and crisp - See Gino's Tip. Transfer to a serving dish and in the same pan crisp your diced bacon for 3-4 minutes. Now add your mince back to the pan along with your DailyDish Aromatics and sugar/sweetener, cook for 3-4 minutes. Now add your chopped chives and your DailyDish Pad Kee Mao Base along with your water and cook until your sauce has warmed through and melded. Once your noodles are cooked, add them to your sauce and cook for one minute until the sauce adheres to your noodles. Finish by adding your edamame and peas and seasoning with salt and pepper to taste.

To Serve

Divide your sweet spiced pad kee mao noodles amongst your servings.
