Chunky Bacon Roast Veg Baked Orzo

In the oven and done in no time, this weeknight quicky is perfect for all tastebuds packed with onions, carrots, button mushrooms, herbs, a bouillon base and parmesan to finish.




Ingredients to serve 2

  • 200g x Diced Bacon
  • ½ x Onion - chunked
  • 20g x Crushed Garlic
  • 2.5g x Rosemary - chopped
  • 1 x Carrots - peeled and cut into 1cm slices
  • 2 stalks x Leek - sliced and rinsed thoroughly
  • 150g x Button Mushrooms - cut into quarteres
  • 1 sachet x Chicken Stock
  • 15g x Grated Parmesan
  • 5g x Italian Flat Leaf Parsley - chopped
  • 150g x Orzo
  • 400ml x Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

  • 400g x Diced Bacon
  • 1 x Onion - chunked
  • 40g x Crushed Garlic
  • 5g x Rosemary - chopped
  • 2 x Carrots - peeled and cut into 1cm slices
  • 4 stalks x Leek - sliced and rinsed thoroughly
  • 300g x Button Mushrooms - cut into quarteres
  • 2 sachets x Chicken Stock
  • 30g x Grated Parmesan
  • 10g x Italian Flat Leaf Parsley - chopped
  • 300g x Orzo
  • 800ml x Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 180°C.

Washing Instruction

Wash your hands, carrots and leeks well. Rinse your rosemary and Italian flat-leaf parsley well. Brush your mushrooms with a soft basting brush.

Gino's Tip

Soaking your sliced leeks in water will remove all the grit, be sure to drain on paper towel though.

Step 1 - Orzo Base

Heat a large casserole pan over med-high heat, add drizzling of olive oil and once the pan is hot brown your diced bacon for 4-5 minutes before adding your chunked onions, crushed garlic, chopped rosemary, diced carrots, sliced leeks and quartered button mushrooms. Allow to cook with a lid on and at medium heat for 3-4 minutes before adding your water, chicken stock and orzo. Transfer to a baking dish with a lid, you can use foil and pop into the oven to cook for 12-15 minutes until your orzo is fully cooked and your vegetables are tender.

TO SERVE

Divide your chunky bacon roast veg baked orzo amongst your servings, top with your grated parmesan and chopped italian flat leaf parsley.
