Method
Step 1
Preparation: Boil the kettle. Prepare all ingredients as indicated above.
Step 2
Sauce: Mix together the garlic, sweet & sour sauce, oyster sauce and ginger.
Step 3
Egg noodles: Place the noodles in a bowl, cover with boiling water and soak for 13-15 minutes until cooked, but with a slight bite. Drain. Using the same pan you used for the beef, turn the heat down to low. Add water (2 tbsp for 4; 1 tbsp for 2) and the egg noodles and mix through.
Step 4
Cucumber salad: Mix together the cucumber, carrots and bell pepper slices.
Step 5
Beef stir-fry: Season your beef strips with salt and pepper then coat in your cornflour. Proceed to shallow fry your beef strips in a large casserole pan over a med-high heat, works best if your oil is heated in the pan before adding your beef strips. Remember not to overcrowd your pan and transfer your crisp beef to a plate lined with paper towel. Once done, decant the oil in your pan add a good few glugs of olive oil, add your sauce and once it bubbles vigorously add your cooked noodles and fry and mix for 1-2 minutes.
Step 6
Serve by mixing the beef through the egg noodles, top with the peanuts and serve the salad on the side.
