Method
Before You Begin
Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220°C. Make a dressing with your DailyDish Bloody Mary Dressing, olive oil, salt and pepper.
Washing Instruction
Wash your hands courgette and red peppers well. Rinse your baby spinach, italian flat leaf parsley and watercress thoroughly and drain on paper towel.
Gino's Tip
You want your pan really hot when searing halloumi, this stops the cheese from melting entirely and promotes that great caramelised look and taste.
Step 1 - Roasted Marrow and Capsicums
Toss your courgette and red pepper chunks in a large mixing bowl along with salt, pepper and olive oil.
Scatter onto an oven tray and pop into the oven for 10-12 minutes until lightly browned and tender.
In the last 5 minutes scatter over your pumpkin seeds.
Step 2 - Charred Onions and Seared Halloumi - See Gino's Tip
Heat a large frying pan over med-high heat, once your pan is hot but not smoking, add a drizzling of olive oil and then proceed to sear your red onion chunks.
Once your red onion has charred nicely push it to once side and add your diced halloumi frying and searing for 1-2 minutes until browned.
Step 3 - Garlic Cream Steak
Season your steaks with salt and pepper.
Heat a large frying pan over med-high heat, once your pan is hot but not smoking, add a drizzling of olive oil and then proceed to sear your steaks for 2 minutes on each side - be sure to get some good colour before turning over.
At this point add your butter and garlic, once it froths and your garlic starts browning, add your cream and bring your sauce to heat. Once heated through, remove your pan from the stove and mix through your chopped italian flat leaf parsley..
TO SERVE
Add your baby spinach and watercress into a large bowl, dress with your bloody mary dressing, add your roasted marrow, capsicums, charred onions and halloumi. Divide this amongst your servings and top with your garlic cream steak.
