Method
Before You Begin
Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”.
Washing Instruction
Wash your hands, cherry tomatoes and cauliflower well. Rinse your coriander thoroughly and drain on paper towel.
Gino's Tip
Grating your cauliflower into a bowl, minimizes all the mess and gets the job done so much more quickly. You want your rice to have body, so don't chop or grate too finely.
Step 1 - Lentil Dhal
Heat a medium saucepan over med-high heat, once your pan is warm, add a drizzling of olive oil the fry your DailyDish Aromatic Base off for 2-3 minutes, add your DailyDish Spice Mix and stir and cook for one minute, before adding your lentils.
Now add a cup of water and bring your liquid to the boil, reducing the temperature, so that its simmering, stir and cook until your lentils are done and your sauce has formed.
This will take about 20-25 minutes - please note that you have to replenish your water, by adding a cup at a time as the lentils absorb the water. Stirring is critical to stop any singeing.
Step 2 - Cauliflower Risotto
Heat a large casserole pan over med-high heat, add a drizzling of olive oil and once your pan is hot add your cauliflower stirring and cooking for 4-5 minutes before adding your cream.
Allow your cream to heat through, taste and season then mix through your grated parmesan, allow your sauce to thicken lightly and remove your pan from the heat.
Taste if seasoning is needed.
Step 3 - Crispy Bacon
Heat a large frying pan, add a bit of olive oil and once the pan is hot add your bacon and crisp it up for 3-4 minutes on each side.
Drain on paper towel.
TO SERVE
Mix your halved cherry tomatoes and picked coriander together, drizzle with olive oil, salt and pepper. Divide your cauliflower risotto amongst your servings, top with your lentil dhal, crispy bacon and tom fresca.
