Mediterranean Chicken Conchiglie

A simple smoky meditteranean affair with this smoked chicken, olive and courgette quick braise with parmesan conchiglie pasta.




Ingredients to serve 2

  • 200g x Smoked Chicken - flaked
  • 2 cloves x Garlic - chopped
  • 2 tbsps x Harissa Paste
  • ½ tin x Whole Peeled Tomatoes - liquid reserved for cooking, tomatoes chopped roughly
  • 50g x Olives
  • 25g x Raisins
  • 2 x Courgettes - diced
  • 100g x Baby Spinach - long or thick stems removed
  • 150g x Conchiglie
  • 30g x Parmesan - grated
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)
  • Water (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Bring a large saucepan of water to the boil for use in Step 1.

Washing Instruction

Wash your hands and courgettes well. Rinse your baby spinach thoroughly and drain on paper towel.

Gino's Tip

Conchiglie, commonly known as "shells" or "seashells", is a type of pasta. It is usually sold in the plain durum wheat variety, and also in colored varieties which use natural pigments, such as tomato extract, squid ink or spinach extract. The shell shape of the pasta allows the sauce to adhere to it.

Step 1 - Conchiglie

Once your water has come to the boil, cook your pasta for 10-12 minutes until "al-dente" - tender with a slight bite. Drain through a colander and reserve to serve - before serving mix through your grated parmesan.

Step 2 - Meditteranean Chicken

Heat a large casserole pan over med-high heat, once your pan is hot, add a drizzle of olive oil and fry your diced courgette until lightly browned, about 3-4 minutes (try to do them in batches if your pan isn't big enough) Transfer your courgette to a plate then fry your flaked smoked chicken and chopped garlic for 2-3 minutes before adding your harissa paste then cook while stirring (stir gently as not to break the chicken up too much) for 1-2 minutes. Proceed to add your chopped whole peel tomatoes, the reserved liquid, some water, raisins, olives, fried courgette and allow to cook until for 8-10 minutes until your flavours have melded and your sauce has formed. Lastly, add your baby spinach and allow to wilt for 2-3 minutes - add more water if your sauce thickens too much. Season to taste with a little sugar/sweetener if too tart, salt and pepper.

TO SERVE

Divide your conchiglie amongst your servings, top with your medetteranean chicken.
