Pepper Sauce Steak with Truffled Butternut Mash

A little decadence and a whole lot of fit vibes with this truffled butternut mash, mushroom sauce, crispy beans and sirloin steak.




Ingredients to serve 2

  • 2 x Sirloin Steaks
  • 100ml x DD Mushroom Sauce
  • 400g x Butternut Chunks
  • 2.5ml x Truffle Oil
  • 200g x Green Beans
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

  • 4 x Sirloin Steaks
  • 200ml x DD Mushroom Sauce
  • 800g x Butternut Chunks
  • 5ml x Truffle Oil
  • 400g x Green Beans
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Bring a medium saucepan of salted water to the boil for use in Step 2.

Wash your hands and green beans well.

A truffle is the fruiting body of a subterranean ascomycete fungus, predominantly one of the many species of the genus Tuber, delicious grated or shaved into butter pasta dishes.

Step 1 - Truffled Butternut Mash

Cook your butternut in a large saucepan of water for 10-12 minutes until soft (be sure to just about cover your butternut, adding more water will make your mash watery), drain through a colander once done and allow to steam dry. Then mash with a potato masher until smooth, seasoning with salt, pepper and mix through your truffle oil. A food processor works wonders when making vegetable mash or puree.

Step 2 - Greens

Blanch your green beans in your boiling water for 5-6 minutes until tender with a slight bite.

Step 3 - Mushroom Steak

Heat a large frying pan over med-high heat, add a drizzling of olive oil and once your pan is hot but not smoking sear your sirloin steak for 2-3 minutes each side or your steak can be cooked to your desired doneness whether that be more or less time. Once done transfer to your chopping board and heat your mushroom sauce through seasoning as your go and adding more pepper, at your discretion, to make a peppery mushroom sauce.

TO SERVE

Divide your truffled butternut mash amongst your servings, top with your steak and sauce finishing with your greens.
