Baked Feta and Grape Tomato Spaghetti

A viral trendy rendition of baked feta pasta with capers, olives and grape tomatoes with a hint of biltong.




Ingredients to serve 2

  • 125g x Feta
  • 250g x Cherry Tomatoes - halved
  • 40g x Capers
  • 60g x Olives - halved
  • 2 cloves x Garlic - roughly chopped
  • 10g x Italian Flat Leaf Parsley - chopped
  • 150g x Spaghetti
  • 30g x Parmesan - grated
  • 50g x Biltong - chopped
  • 10g x Basil - leaves pulled from stem
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

  • 250g x Feta
  • 500g x Cherry Tomatoes - halved
  • 80g x Capers
  • 120g x Olives - halved
  • 4 cloves x Garlic - roughly chopped
  • 20g x Italian Flat Leaf Parsley - chopped
  • 300g x Spaghetti
  • 60g x Parmesan - grated
  • 100g x Biltong - chopped
  • 20g x Basil - leaves pulled from stem
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220°C. Bring a large saucepan of salted water to the boil for use in Step 2.

Washing Instruction

Wash your hands and cherry tomatoes well. Rinse your Italian flat-leaf parsley and basil thoroughly and drain on paper towel.

This bake can also be blended into a great dip for snacks.

Step 1 - Feta Bake

Scatter your halved cherry tomatoes, capers, halved olives and chopped garlic onto an oven tray, place your feta in the centre. Drizzle with ample olive oil and season with salt and pepper. Pop into your preheated oven for 18-20 minutes. Remove your oven tray and mix your ingredients, gently crumbling and breaking your feta, as you do so. Lastly, sprinkle over your chopped parsley.

Step 2 - Spaghetti

Once your large saucepan of water comes to the boil cook your spaghetti for 10-12 minutes until al dente - tender with a slight bite. Drain through a colander, drizzle with olive oil and season with salt and pepper.

TO SERVE

Divide your pasta amongst your servings, top with your feta bake, any tray sauce, sprinkle over your chopped biltong, grated parmesan and picked basil.
