Seared Meatballs with Cheesy Jasmine

Meatballs and cheesiness is just what the kids ordered or did they, this is a test kitchen winner and deserves a top spot at any dinner with these cajun meatballs, cheesy jasmine rice and roasted broccoli.




Ingredients to serve 2

  • 300g x Beef Mince
  • 2.5g x Cajun Spice
  • ½ x Onion - diced
  • 10g x Crushed Garlic
  • 80g x Jasmine Rice
  • 40ml x Cream Cheese
  • 40g x White Cheddar
  • 300g x Broccoli - cut into florets
  • 1 stalk x Spring Onion - finely chopped
  • 20g x Butter (from your pantry)
  • 1½ cups x Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 600g x Beef Mince
  • 5g x Cajun Spice
  • 1 x Onion - diced
  • 20g x Crushed Garlic
  • 160g x Jasmine Rice
  • 80ml x Cream Cheese
  • 80g x White Cheddar
  • 600g x Broccoli - cut into florets
  • 2 stalks x Spring Onion - finely chopped
  • 40g x Butter (from your pantry)
  • 3 cups x Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Mix your beef mince along with your cajun spice and spring onion. Season to taste with salt and pepper then roll into 4-5 balls per person (roughly 30g per meatball). Preheat your oven to 200°C

Washing Instruction

Wash your hands and broccoli and spring onion well.

Gino's Tip

Jasmine rice works really well for bake and pilafs as its short grain and starch content helps to create sauciness.

Step 1 - Roasted Greens and Seared Meatballs

Toss your broccoli in a large mixing bowl with a drizzling of olive oil, salt, and pepper. Place onto an oven tray and pop into the oven for 15-18 minutes until tender and lightly browned. Heat a large frying pan over medium-high heat then add a drizzle of olive oil and once the pan is hot fry your meatballs for 6-8 minutes until cooked through.

Step 2 - Cheddar Rice

Heat a medium saucepan over medium-high heat, add a drizzling of olive oil and fry your diced onion and chopped garlic for 2-3 minutes. Now add your jasmine rice and cook until your rice is slightly toasted. Proceed to stir through your cream cheese and water, and transfer to a baking dish, preferably with a lid (or cover with foil), and pop into the oven 15-18 minutes until soft and cooked. Before serving, mix through your grated white cheddar.

To Serve

Divide your cheddar rice, seared meatballs and greens amongst your servings.
