Blanco Chicken Mex Lasagne

Lasagne is a every night winner and when made this way tex mex way its a all my life winner, smoky chicken, peas and green beans with a herb cream cheese sauce for layering, topped with cheddar and grape tomatoes.




Ingredients to serve 2

  • 250g x Smoked Chicken - flaked
  • ½ x Onion - diced
  • 20g x Crushed Garlic
  • 1 x Green Pepper - diced
  • 125g x Peas
  • 100g x Cream Cheese
  • 100ml x Cream
  • 10g x Italian Flat Leaf Parsley - chopped
  • 100g x Cheddar - grated
  • 100g x Cherry Tomatoes - quartered
  • 5 x Tortilla Wraps
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 500g x Smoked Chicken - flaked
  • 1 x Onion - diced
  • 40g x Crushed Garlic
  • 2 x Green Pepper - diced
  • 250g x Peas
  • 200g x Cream Cheese
  • 200ml x Cream
  • 20g x Italian Flat Leaf Parsley - chopped
  • 200g x Cheddar - grated
  • 200g x Cherry Tomatoes - quartered
  • 10 x Tortilla Wraps
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to grill.

Washing Instruction

Wash your hands, green peppers and cherry tomatoes well. Rinse your italian flat-leaf parsley thoroughly and drain on paper towel.

Gino's Tip

If you like you can blend your cream cheese, cream and parsley together for a smoother, easier to mix outcome.

Step 1 - Blanco lasagna Fills

Heat a large casserole pan over med-high heat, add a drizzling of olive oil and fry your diced onions and crushed garlic for 3-4 minutes, then add your diced green pepper and peas and continue cooking for 2-3 minutes. Taste and season with salt and pepper and mix through your flaked smoked chicken.

Step 2 - Blanco Sauce - See Gino's Tip

Whisk together your cream cheese and cream - heating your cream cheese slightly makes it easier, you can do this in the microwave or in a small saucepan. Mix through your chopped parsley and season lightly with salt and pepper.

Step 3 - Assembling your Lasagna

Grab a medium baking dish and place 2-3 tortillas as your base, top with some of your fills and some grated cheddar. Create another layer, just with your blanco lasagne fills, then top with your remaining tortillas your remaining sauce, quartered cherry tomatoes and your remaining grated cheddar. Pop into the oven on grill until your cheese is oozy and gratinated.

TO SERVE

Divide your blanco chicken mex lasagna amongst your servings.
