Caramelised Steak with Saag Aloo

A deliciously simple Indian dinner winner, sweet potato, pea, coconut, and spinach saag aloo with a seared sirloin steak.




Ingredients to serve 2

  • 2 x Sirloin Steaks
  • 70g x DD Aromatics
  • 10g x DD Spice Mix - saag
  • ¼ tin x Coconut Cream
  • ¼ sachet x Chicken Stock
  • 200g x Swiss Chard
  • ½ x Red Chilli - sliced (use at your discretion)
  • 100g x Peas
  • 200g x Sweet Potato Chunks
  • 15ml x Chutney
  • 10g x Coriander - chopped
  • 2.5ml x Black Sesame Seeds
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)
  • Water (from your pantry)
  • Milk (from your pantry)

Ingredients to serve 4

  • 4 x Sirloin Steaks
  • 140g x DD Aromatics
  • 20g x DD Spice Mix - saag
  • ½ tin x Coconut Cream
  • ½ sachet x Chicken Stock
  • 400g x Swiss Chard
  • 1 x Red Chilli - sliced (use at your discretion)
  • 200g x Peas
  • 400g x Sweet Potato Chunks
  • 30ml x Chutney
  • 20g x Coriander - chopped
  • 5ml x Black Sesame Seeds
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)
  • Water (from your pantry)
  • Milk (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”.

Washing Instruction

Wash your hands and chilli well. Rinse your swiss chard and coriander thoroughly and drain on paper towel.

Saag Aloo - (curried spinach and potato) is a common dishes in Punjabi cuisine, which are also served in restaurants and take-aways in the Western world.

Step 1 - Sweet Potato Saag Aloo

Place your sweet potato chunks in a microwavable bowl, add a dash of water, cover with cling film and poke a few holes through the film. Place in your microwave for 6-8 minutes until your potatoes are just about tender. In meanwhile heat a large casserole pan over med-high heat, add a drizzling of olive oil and sweat off your DailyDish Aromatics for 3-4 minutes then proceed to add your DailyDish Spice Mix and cook through for 1-2 minutes while stirring. Now add your shredded swiss chard, chicken stock, chopped coriander and coconut cream and cook until your chard has wilted about 2-3 minutes. Lastly, add your peas and cook for 1-2 minutes then fold in your chutney. Taste and season with salt and pepper, thin with water or milk if need be.

Step 2 - Crispy Sesame Chilli Sweet Potato

Heat a large frying pan over med-high heat, add a drizzling of olive oil, once your pan is hot add your tender sweet potatoes and cook until lightly browned before adding your sliced chilli and black sesame seeds. You want to add your sweet potato and allow it to attain colour and crisp before turning them over. Lastly, remove your pan from the heat and season with salt and pepper.

Step 3 - Sirloin Steak

Season your steak with salt and pepper. Heat a large frying pan over med-high heat, add a drizzling of olive oil and once your pan is hot fry your steaks for 2-3 minutes on each side or cooked to your desired doneness whether this is longer or shorter.

TO SERVE

Divide your saag amongst your servings, top with your crispy sesame chilli sweet potato and your seared sirloin steak.
