Creamy Haddock and Greens Pie

Ingredients to serve 2

  • 200g x Haddock - diced (please check for any bones)
  • 400g x Sweet Potato Chunks
  • 100g x Baby Spinach - roughly shredded
  • 100g x Button Mushrooms - sliced
  • ½ sachet x Chicken Stock
  • 1 stalks x Spring Onion - sliced
  • 100ml x Cream
  • 50ml x Creme Fraiche
  • 15g x Grated Parmesan
  • 20g x Crispy Onions
  • 5g x Italian Flat Leaf Parsley - chopped
  • 5g x DD Spice Mix - fish pie
  • 50ml x Boiling Water (from your pantry)
  • 20g x Butter (from your pantry)
  • 1 x Eggs - whisked (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

  • 800g x Sweet Potato Chunks
  • 200g x Baby Spinach - roughly shredded
  • 200g x Button Mushrooms - sliced
  • 1 sachet x Chicken Stock
  • 2 stalks x Spring Onion - sliced
  • 200ml x Cream
  • 100ml x Creme Fraiche
  • 30g x Grated Parmesan
  • 40g x Crispy Onions
  • 10g x Italian Flat Leaf Parsley - chopped
  • 10g x DD Spice Mix - fish pie
  • 100ml x Boiling Water (from your pantry)
  • 40g x Butter (from your pantry)
  • 1 x Eggs - whisked (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220°C. Boil the kettle for use in Step 2.

Washing Instructions

Wash your hands well. Rinse your baby spinach and Italian flat-leaf parsley thoroughly and drain on a paper towel. Brush your mushrooms with a soft basting brush or wipe with a clean kitchen towel.

Your mash doesn't have to be perfect; simply mashed is even better for that homely seasonal feel.

Step 1 - Sweet Potato Mash

Cook your sweet potato chunks in a large saucepan of salted water for 12-15 minutes until soft. Once soft, drain through a colander and rustically mash along with your butter.

Step 2 - Greens and Fraiche Sauce

Heat a large casserole pan over medium-high heat, add a drizzle of olive oil and fry your button mushrooms for 3-4 minutes until tender. Now add DailyDish Spice Mix and your baby spinach and continue cooking until your spinach has wilted. Transfer to a serving dish. Remove your pan from the stove and in the residual heat mix together your cream, creme fraiche, chicken stock, sliced spring onion, and boiling water. Add your cooked greens, diced haddock, chopped Italian flat-leaf parsley, and transfer to a medium baking dish. Once your potatoes are mashed, place them on top of your greens and creme fraiche mixture. Brush them with your whisked egg and sprinkle over your parmesan and crispy onions. Place in the oven and bake for 8-10 minutes until your cheese and potatoes are lightly browned.

To Serve

Divide your creamy haddock and greens amongst your servings.
