Herbes De Provence Steak and Dijon Roast

Herby Steak with seasonal oven-roasted patty pans, turnips, and green beans, drizzled with a sweet mustard sauce.




Ingredients to serve 2

  • 2 x Sirloin Steaks
  • 2 cloves x Garlic - peeled and squashed
  • 1 x Onion - quartered and layers separated
  • 1 x Turnip - peeled and chunked
  • 2 x Carrots - cut into rounds
  • 100g x Green Beans - stem ends trimmed
  • 100g x Patty Pans - stem end trimmed and quartered
  • 60ml x DD Sweet Mustard
  • 2.5ml x DD Herbes De Provence Mix
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 4 x Sirloin Steaks
  • 4 cloves x Garlic - peeled and squashed
  • 2 x Onion - quartered and layers separated
  • 2 x Turnip - peeled and chunked
  • 4 x Carrots - cut into rounds
  • 200g x Green Beans - stem ends trimmed
  • 200g x Patty Pans - stem end trimmed and quartered
  • 120ml x DD Sweet Mustard
  • 5ml x DD Herbes De Provence Mix
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220°C.

Washing Instruction

Wash your hands, turnip, carrots, green beans, and patty pans well.

Gino's Tip

It's best to cut all your vegetables the same size when roasting so that they cook in allotted time.

Step 1 - Roasted Veggies

Toss your garlic cloves, onion petals, chunked turnips, and carrot rounds in a large mixing bowl along with a good drizzle of olive oil, salt, and pepper. Scatter onto an oven tray, cover with foil, and roast for 10-12 minutes. Remove your foil and continue roasting for a further 10-12 minutes until your vegetables are lightly browned and tender. Now toss your green beans and patty pans in your large mixing bowl, drizzle with olive oil, and season with salt and pepper. Scatter onto an oven tray and once you have removed the foil from your garlic, onions, turnips, and carrot tray, pop your green beans and patty pans in to roast for 10-12 minutes.

Step 2 - Herb De Provence Steak

Season your sirloin steaks with salt, pepper and rub with your DailyDish Herbes De Provence. Heat a large frying pan over medium-high heat, add a dash of olive oil and fry your sirloin steaks for 2-3 minutes on each side or cooked to your desired doneness. Transfer to a chopping board. Remove your pan from the heat and while it's still warm add your DailyDish Sweet Mustard and warm your sauce through adding a dash of water to thin your sauce out slightly.

To Serve

Place your roasted veggies as your base, top with your herbes de provence steak drizzled with your DailyDish Sweet Mustard.
