Pork Kebabs with Salsa Sweet Potatoes

Salsa fried pork kebabs with sweet potato and spiced sour cream, cooling guac, and scallions.




Ingredients to serve 2

  • 4 x Pork Neck Kebabs
  • 7.5g x BBQ Spice
  • 2.5g x Ground Cumin
  • 300g x Sweet Potato Chunks
  • 1 stalk x Spring Onion - finely sliced
  • 1 x English Tomato - quartered, core removed and diced
  • ½ x Pickled Green Jalapeno - finely sliced
  • 5g x Coriander - chopped
  • 80ml x Guacamole
  • 60ml x Sour Cream
  • 50ml x DD Red Sauce
  • Sunflower Oil (from your pantry) - See Step 1
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 8 x Pork Neck Kebabs
  • 15g x BBQ Spice
  • 5g x Ground Cumin
  • 600g x Sweet Potato Chunks
  • 2 stalks x Spring Onion - finely sliced
  • 2 x English Tomato - quartered, core removed and diced
  • 1 x Pickled Green Jalapeno - finely sliced
  • 10g x Coriander - chopped
  • 160ml x Guacamole
  • 120ml x Sour Cream
  • 100ml x DD Red Sauce
  • Sunflower Oil (from your pantry) - See Step 1
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220°C.

Washing Instruction

Wash your hands, spring onion and english tomatoes well. Rinse your coriander thoroughly and drain on paper towel.

Gino's Tip

If you don't have a grill pan the recipe works just as well with a frying pan, be sure to get your pan smoking hot beforehand and between each batch.

Step 1 - Roast Sweet Potatoes

Place your sweet potato chunks on an oven tray lined with baking sheet/parchment. Drizzle with olive oil and season with salt and pepper. Pop into a pre-heated oven to bake for 18-25 minutes. Check on your potatoes after 8-10 minutes and at regular intervals thereafter to see if they need to be flipped or turned to gain even crisping and browning. Once done, set aside until later. Alternatively, you could boil the chunks until soft, allow them to drain and dry in your colander and then fry them in a shallow layer of sunflower oil just before serving (optional).

Step 2 - Salsa, Guacamole and Red Crema

Mix your diced English tomatoes, sliced spring onion, sliced pickled green jalapeno (use your discretion in regards to your kids) and chopped coriander in a medium mixing bowl. Drizzle lightly with olive oil and season with salt and pepper. Season your guacamole with salt and pepper and olive oil. Whisk together your sour cream and DailyDish Red Sauce.

Step 3 - Spiced Kebabs

Season your pork neck kebabs lightly with salt and pepper then rub with your BBQ spice and cumin. Heat a large grill pan over high heat and, when smoking hot, fry your pork kebabs for 2-3 minutes on each side until well browned. They should cook for 6-8 minutes in total. Transfer to a plate.

TO SERVE

Divide your roast sweet potato amongst your servings, top with your salsa and spiced pork kebabs and serve with your guacamole and red crema.
