Solo: Steak with Harissa Pomme Anna

A succulent, easy, homemade rustic grated pomme anna with a luscious sirloin steak and garlic fried beans.

Ingredients to serve 1

  • 1 x Sirloin Steaks
  • 50g x Sweet Potato chunks - grated
  • ½ x Carrot - peeled and grated
  • ½ x Turnip - peeled and grated
  • 10ml x Harissa Paste
  • 5g x Crushed Garlic
  • 2.5g x Thyme - leaves pulled from stem
  • 37.5ml x Cream
  • 15g x Grated Parmesan
  • 75g x Green Beans - stem end trimmed
  • 50ml x DD Lemon Dijon Sauce
  • 10g x Butter (from your pantry)
  • Spray and Cook - Optional - See Step 1
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)


Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220°C.

Washing Instruction

Wash your hands, carrots, green beans and turnips well. Rinse your thyme thoroughly and drain on paper towel.

Gino's Tip

Pomme Anna - is a classic French dish of sliced, grated or layered potatoes cooked in a very large amount of melted butter. In this recipe, we have made it a lot lighter with the use of cream instead of butter.

Step 1 - Root Veg Pomme Anna and Roasted Green Beans

Mix your grated sweet potato, carrots and turnips in a large mixing bowl along with a good seasoning of salt and pepper, your crushed garlic, thyme leaves, harissa, cream and grated parmesan. Transfer into a medium baking dish lined with a baking sheet or sprayed with spray and cook. Place into the oven for 30-35 minutes until tender and lightly browned. Give your large mixing bowl a quick clean and toss your green beans with a drizzle of olive oil, salt and pepper. Scatter onto an oven tray and place into the oven in the last 15 minutes of roasting your pomme anna.

Step 2 - Seared Steak and Lemon Dijon Sauce

Rub your sirloin steaks with some olive oil and season with salt and pepper. Heat a large frying pan over med-high heat, once your pan is hot but not smoking fry your steaks for 2-3 minutes on each side or cooked to your desired doneness. Transfer your steaks to a chopping board to rest once done. Add your DailyDish Lemon Dijon Sauce to the pan allow your sauce to reduce by half its volume, remove your pan from the heat and stir in your butter. Season your sauce with salt and pepper to taste.

To serve

Divide your root veg pomme anna amongst your servings, top with your roasted green beans, seared steak and lemon dijon sauce.
