Mustard Grilled Chicken with Warm Fennel Salad

A honey and mustard marinated grilled chicken with dill and fennel warm potato salad and nutritious tender stem greens.




Ingredients to serve 2

  • 2 x Chicken Breast - flattened
  • 80ml x DD Honey and Mustard Glaze
  • 1 x Red Onion - cut into chunks
  • 1 clove x Garlic - chopped
  • 2 x Gherkins - chopped
  • 10g x Fennel - chopped
  • 200g x Tenderstem Broccoli
  • 400g x Baby Potatoes - quartered
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 4 x Chicken Breast - flattened
  • 160ml x DD Honey and Mustard Glaze
  • 2 x Red Onion - cut into chunks
  • 2 cloves x Garlic - chopped
  • 4 x Gherkins - chopped
  • 20g x Fennel - chopped
  • 400g x Tenderstem Broccoli
  • 800g x Baby Potatoes - quartered
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Bring a medium saucepan to a boil for use in Step 3. Marinade your flattened chicken breast in a bowl with your DailyDish Honey Mustard Glaze, salt, and pepper.

Washing Instruction

Wash your hands, tenderstem broccolli and potatoes well. Rinse your fennel thoroughly and drain on paper towel.

Gino's Tip

Be sure to flip your chicken readily when grilling it from a marinade. Increase and decrease your heat as you see fit so that the sauce doesn't burn. You will get quite a bit of caramelisation so don't sweat it if you see dark char grilling goodness.

Step 1 - Warm Potato Salad

Cook your quartered baby potatoes in a medium saucepan of salted water for 10-12 minutes until just about tender. Once done, place in a large mixing bowl and toss with your chopped garlic, chopped gherkins, chopped fennel, a drizzling of olive oil, salt, and pepper. Keep warm until you are ready to serve.

Step 2 - Sticky Honey Mustard Chicken

Heat a large grill pan over high heat, once hot and just about smoking, char your chunked onions for 4-5 minutes, and once done mix into your warm potato salad. Give your pan a quick wipe and place it back on the heat. Once your pan begins to smoke once more, grill your flattened marinaded chicken breasts for 8 minutes; 2 minutes each side until cooked all the way through.

Step 3 - Greens

Once your water in your medium saucepan has come to the boil, cook your tenderstem brocolli for 6-8 minutes until just about tender. Drain through a colander, drizzle with olive oil, and season lightly with salt and pepper.

To Serve

Divide your warm potato salad amongst your servings, top with your greens and sticky honey mustard chicken.
