Chicken Saltimbocca with Chunky Cottage Greens

The joys of chicken and bacon with a lovely sage and sweet wine sauce served with buttery mash and chunky cottage cheese and milk dressed green salad.




Ingredients to serve 2

  • 2 x Chicken Breast - flattened
  • 100g x Sliced Streaky Bacon
  • 2.5g x Sage
  • 100ml x Marsala Wine
  • 400g x Potatoes - peeled and chunked
  • 150g x Cherry Tomatoes - halved
  • ½ x Carrots - shaved with a peeler or grated
  • ½ x Cucumber - halved lengthwise then sliced
  • 60g x Chunky Cottage Cheese
  • 20g x Rocket - long or thick stems removed
  • 20g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)
  • Milk (from your pantry)

Ingredients to serve 4

  • 4 x Chicken Breast - flattened
  • 200g x Sliced Streaky Bacon
  • 5g x Sage
  • 200ml x Marsala Wine
  • 800g x Potatoes - peeled and chunked
  • 300g x Cherry Tomatoes - halved
  • 1 x Carrots - shaved with a peeler or grated
  • 1 x Cucumber - halved lengthwise then sliced
  • 120g x Chunky Cottage Cheese
  • 40g x Rocket - long or thick stems removed
  • 40g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)
  • Milk (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out.Take out any “Pantry Items”

Washing Instruction

Wash your hands, potatoes, cherry tomatoes, carrots and cucumber well. Rinse your sage and rocket thoroughly and drain on paper towel.

Flattening your chicken breast will make it easier to cook and allow the breast to cook more uniformly.

Step 1 - Mashed Potato

Cook your chunked potatoes in a large saucepan of salted water for 12-15 minutes until tender and soft. Drain through a colander, allow to steam dry for a few minutes then proceed to mash with a potato masher. For a smoother lighter mash, warm some butter and milk in the microwave and mash it through your potatoes - please note this is excluding the pantry butter and milk displayed.

Step 2 - Creamy Green Salad

Whisk together your cottage cheese and some milk along with olive oil and a seasoning of salt and pepper - you should have a light dressing, as a guide use about 80-100ml milk for a 4 serving dressing. Mix together your halved cherry tomatoes, julienned/grated carrots, sliced cucumber, and rocket and reserve for serving.

Step 3 - Chicken Saltimbocca

Place two slices of bacon on your chopping board then add a few sage leaves followed by your chicken breast. Wrap your chicken breast in your bacon then heat a large frying pan over medium-high heat, add a drizzling of olive oil, and once the pan is just about hot add your chicken breast. Sear them well on both sides until your bacon is crispy and has some browning - about 2-3 minutes on each side. Before transferring them to a plate, then deglaze your pan with your marsala wine, add butter and once it melts, add your chicken back to the pan and cook for 3-4 minutes until your chicken is cooked through.

To Serve

Divide your mashed potatoes amongst your servings and serve with your creamy green salad and saltimbocca chicken.
