Method
Before You Begin
Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220°C. Bring a large saucepan of water to a boil for use later. Whisk your pantry flour and water to create a batter, season with salt and pepper.
Washing Instructions
Wash your hands, cauliflower, spring onion and mangetout well.
Gino's Tip
General Tso sauce is one of the most versatile stir fry sauces that I recommend every home cook store a jar in their fridge. Not only does it takes merely 3 minutes to make, but it also goes well with almost everything.
Step 1 - Fragrant Rice
Once your water in your medium saucepan has come to a boil, add your basmati rice, give it a good stir, once your water comes to the boil again, reduce your heat to simmer.
Cook for 8-10 minutes until your rice is tender.
Drain through a colander and season lightly with salt and pepper.
Meanwhile, heat a large casserole pan over medium-high heat, add a drizzling of olive oil, and fry your crushed garlic and ginger for 1-2 minutes then add your peas and mangetout and cook with a dash of water for 2-3 minutes.
Once your rice is done, mix it into your greens mixture, along with your sliced spring onion, taste, and season if need be.
Step 2 - Tso's Cauliflower
Prepare an oven tray or two lined with baking sheet/parchment paper.
Coat your cauliflower florets and diced tofu in your batter and then place on your lined oven tray - evenly spaced apart.
Pop into the oven for 20-25 minutes until lightly browned and crisp.
Once done toss in a bowl with your DailyDish Tso Sauce
To Serve
Divide your fragrant rice amongst your servings and top with your tso cauliflower.
