Ala Vodka Panzarotti

Creamy tomato and mozzarella stuffed panzarottis with creamy ala vodka sauce, gratinated with cheese and served with green bean, cherry tomatoes and feta cheese.




Ingredients to serve 2

  • 150g x Cherry Tomatoes - halved
  • 400g x Tomato and Mozzarella Panzerotti
  • 200ml x DD Aurora Sauce
  • 100g x Grated Mozzarella
  • 200g x Green Beans - stem end trimmed
  • 100g x Feta - gently crumbled
  • 10g x Rocket - long or thick stems removed
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)
  • Bowl of Ice Water (from your pantry)

  • 800g x Tomato and Mozzarella Panzerotti
  • 400ml x DD Aurora Sauce
  • 200g x Grated Mozzarella
  • 400g x Green Beans - stem end trimmed
  • 200g x Feta - gently crumbled
  • 20g x Rocket - long or thick stems removed
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)
  • Bowl of Ice Water (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Bring a large saucepan of salted water to a boil for use in Step 1. Bring a medium saucepan of salted water to a boil for use in Step 2. Preheat your oven to grill.

Washing Instructions

Wash your hands, cherry tomatoes and green beans well. Rinse your rocket thoroughly and drian on paper towel.

Our aurora sauce is a lovely fusion of Napoletana sauce and bechamel which can be used in any kind of pasta even on its own in any meat or veg-based recipes

Step 1 - Tomato and Mozzarella Panzerotti Florentine

Once your large saucepan of water has come to the boil cook your panzerotti for 2-3 minutes until they float to the surface. Drain through a colander and season lightly with salt and pepper. Now add your panzerotti to an oven tray and top with your aurora sauce in an even layer. Sprinkle over the grated mozzarella and pop into the oven for 3-4 minutes until heated through and gratinated. Keep a watchful on your panzerotti as the cheese can singe quite easily with the oven on grill.

Step 2 - Green Bean and Feta Salad

Cook your green beans in your medium saucepan of salted water for 5-6 minutes until just about tender and drain with a slotted spoon into a bowl of ice water. Add your green beans to a large mixing bowl along with your rocket, halved cherry tomatoes, and crumbled feta, season to taste with salt and pepper and then drizzle with some olive oil.

To Serve

Divide your spinach florentine amongst your servings and top with your green bean and feta salad.
