Seared Pork with Spicy Chickpeas

Effortlessly simpe but deceptively tasty this seared pork neck steak with quick cauliflower couscous and smoky med chickpeas is what the palate craves.




Ingredients to serve 2

  • 2 x Pork Neck Steaks
  • ½ tin x Chickpeas - drain, liquid reserved
  • ½ x Cucumber - small dice
  • 100g x Cherry Tomatoes - halved
  • 10g x Watercress - long or thick stems removed
  • 1 head x Cauliflower - grated/ chopped
  • 80ml x Plain Yoghurt
  • 90g x DD Spice Mix - chickpeas
  • Water (from your pantry)
  • Olive Oil (from your pantry)
  • Salt and Pepper (from your pantry)

Ingredients to serve 4

  • 4 x Pork Neck Steaks
  • 1 tin x Chickpeas - drain, liquid reserved
  • 1 x Cucumber - small dice
  • 200g x Cherry Tomatoes - halved
  • 20g x Watercress - long or thick stems removed
  • 2 heads x Cauliflower - grated/ chopped
  • 160ml x Plain Yoghurt
  • 180g x DD Spice Mix - chickpeas
  • Water (from your pantry)
  • Olive Oil (from your pantry)
  • Salt and Pepper (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out.Take out any “Pantry Items”. Mix together your small diced cucumber, halved cherry tomatoes and picked watercress, clingfilm and reserve to serve.

Washing Instruction

Wash your hands, cucumber, cherry tomatoes and cauliflower well. Rinse your watercress thoroughly and drain on paper towel.

Gino's Tip

Alternatively you can pan fry your rice for 5-6 minutes in a pan over medium-high heat with a bit of olive oil and water.

Step 1 - Cauliflower Couscous

Place your cauliflower rice in a microwavable bowl, add a few dashes of water, cover with clingwrap and pop into the microwave on high for 8-10 minutes until soft - See Gino's Tip. Once tender season with salt, pepper and a few drizzles of olive oil.

Step 2 - Spiced Chickpeas

Heat a large casserole pan over medium-high heat, add a drizzling of olive oil and fry your chickpeas with your DailyDish Spice Mix. Now add about a quarter cup of your reserved brine to the pan and a few dashes of water and a little olive oil. Bring your saucy spiced chickpeas to heat, tasting and seasoning, if need be, with salt and pepper.

Step 3 - Seared Pork

Season your pork neck steaks with salt and pepper. Heat a large frying pan over medium-high heat, once your pan is hot add a drizzling of olive oil and fry your pork neck steaks for 3-4 minutes on each side until completely cooked through.

To Serve

Divide your cauliflower couscous amongst your servings, top with your spiced chickpeas, seared pork and cucumber and cress salad (be sure to drizzle with olive oil, salt and pepper) finishing with dollops of yoghurt.
