Chicken and Broccoli Mornay Gratin

A recipe to get the kids coming back for more with this quick and easy smoked chicken, pea, and broccoli gnocchi bake, is the way to any little one's appetite.




Ingredients to serve 2

  • 250g x Smoked Chicken - flaked or diced
  • 1 sachet x Chicken Stock
  • 150g x Gnocchi Pasta Shells
  • ½ head x Broccoli - cut into florets
  • 150g x Peas
  • 100g x Grated Cheddar
  • 5g x Italian Flat-Leaf Parsley - chopped
  • 200ml x DD White Cheddar Cream
  • Milk (from your pantry)
  • Olive Oil (from your pantry)
  • Salt and Pepper (from your pantry)

Ingredients to serve 4

  • 500g x Smoked Chicken - flaked or diced
  • 2 sachets x Chicken Stock
  • 300g x Gnocchi Pasta Shells
  • 1 head x Broccoli - cut into florets
  • 300g x Peas
  • 200g x Grated Cheddar
  • 10g x Italian Flat-Leaf Parsley - chopped
  • 400ml x DD White Cheddar Cream
  • Milk (from your pantry)
  • Olive Oil (from your pantry)
  • Salt and Pepper (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 200°C and bring a large saucepan of salted water to the boil for use in Step 1. Whisk together your DailyDish White Cheddar Cream with your chicken stock and a few dashes of milk to loosen it slightly.

Washing Instruction

Wash your hands and broccoli well. Rinse your Italian flat leaf parsley thoroughly and drain on paper towel.

Gino's Tip

Its really important to have a rolling boil, when cooking pasta, be sure to use a large pot and have ample space for your pasta to roll around. This reduces clumping and promotes even cooking and remember use just under 1 tsp of salt per litre of water.

Step 1 - Gnocchi Pasta Shells

Once your water in your large saucepan has come to the boil, add your gnocchi pasta shells and cook for 10-12 minutes until al dente. Drain through a colander and reserve until later.

Step 2 - Broccoli and Peas

Heat a large frying pan over medium-high heat, add a drizzling of olive oil and proceed to fry your broccoli florets for 1-2 minutes, now add a few dashes of water and your peas and cook for 3-4 minutes until your water is mostly evaporated. Season lightly with salt and pepper.

Step 3 - Assembling your Gratin

In a large mixing bowl mix together your cooked gnocchi pasta shells with your broccoli and peas, then mix through your mixed cream sauce and flaked/diced smoked chicken. Transfer to a baking dish, top with your grated cheddar cheese and pop into the oven for 6-8 minutes until your sauce is hot and your cheese has melted and lightly gratinated. Finish with your chopped Italian flat leaf parsley.

To Serve

Divide your chicken and broccoli mornay amongst your servings.
