Caprese Gnocchi with Toasted Seeds and Pesto

Caprese salad is just so refreshing, classic, and fulfilling we decided to make a warmer version with this baked pomodoro potato gnocchi with roasted grape tomatoes, pumpkin seeds, and basil pesto.

Ingredients to serve 2

  • 300g x Potato Gnocchi
  • 10g x Tomato Paste
  • 5g x Paprika
  • ½ x Onion - diced
  • 1 clove x Garlic - chopped
  • 2.5g x Sage - chopped
  • 60g x Grated Mozzarella
  • 100g x Cherry Tomatoes - halved
  • 30g x Basil Pesto
  • 20g x Pumpkin Seeds
  • 200ml x DD Pesto Pomodoro
  • Olive Oil (from your pantry)
  • Salt and Pepper (from your pantry)

Ingredients to serve 4

  • 600g x Potato Gnocchi
  • 20g x Tomato Paste
  • 10g x Paprika
  • 1 x Onion - diced
  • 2 cloves x Garlic - chopped
  • 5g x Sage - chopped
  • 120g x Grated Mozzarella
  • 200g x Cherry Tomatoes - halved
  • 60g x Basil Pesto
  • 40g x Pumpkin Seeds
  • 400ml x DD Pesto Pomodoro
  • Olive Oil (from your pantry)
  • Salt and Pepper (from your pantry)


Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Preheat your oven to 220°C and bring a large saucepan of salted water to the boil for use in Step 2.

Washing Instruction

Wash your hands and cherry tomatoes well. Rinse your sage thoroughly and drain on paper towel.

Potato gnocchi goes mushy really quickly, once in your boiling water and they begin to roll and float you know they are ready.

Step 1 - Spiced Pesto Pomodoro

Heat a large frying pan over medium-high heat, add a dash of olive oil and fry your diced onion, chopped garlic and chopped sage for 4-5 minutes. Add your tomato paste and paprika with a splash of water and cook for 2-3 minutes. Proceed to add your DailyDish Pesto Pomodoro sauce and bring your liquid to the boil, thinning with water if the sauce becomes too thick. Taste and season with salt and pepper to your liking.

Step 2 - Potato Gnocchi

Proceed to cook your potato gnocchi as per package instructions. Remove with a slotted spoon.

Step 3 - Assembling your Gnocchi

Mix your spiced pesto pomodoro and potato gnocchi in a medium baking dish. Taste and season with salt and pepper, top with your halved cherry tomatoes, pumpkin seeds and grated mozzarella. Pop into the oven for 6-8 minutes until the cheese has melted and the sauce is hot and bubbly.

To Serve

Divide your spiced pesto pomodoro potato gnocchi amongst your servings serve with dollops of basil pesto.
