Tandoori Steak with Lemon Rice and Sambal

A nutty spiced tandoori sirloin steak with lemon cauliflower rice and sweet and salty grape tomato, scallion, and parmesan shard salad.

Ingredients to serve 2

  • 2 x Sirloin Steaks
  • 15g x Tandoori Paste
  • 5g x White Sesame Seeds
  • 1 Head x Cauliflower - chopped or grated into rice
  • 2 Cloves x Garlic - chopped
  • ½ x Lemon - zested then halved for juicing
  • 2.5g x Cumin Seeds
  • 5g x Coriander - chopped
  • 200g x Cherry Tomatoes - halved
  • 1 Stalk x Spring Onion - sliced
  • 30g x Parmesan - grated
  • 20g x Butter (from your pantry)
  • Olive Oil (from your pantry)
  • Salt and Pepper (from your pantry)

Ingredients to serve 4

  • 4 x Sirloin Steaks
  • 30g x Tandoori Paste
  • 10g x White Sesame Seeds
  • 2 Heads x Cauliflower - chopped or grated into rice
  • 4 Cloves x Garlic - chopped
  • 1 x Lemon - zested then halved for juicing
  • 5g x Cumin Seeds
  • 10g x Coriander - chopped
  • 400g x Cherry Tomatoes - halved
  • 2 Stalks x Spring Onion - sliced
  • 60g x Parmesan - grated
  • 40g x Butter (from your pantry)
  • Olive Oil (from your pantry)
  • Salt and Pepper (from your pantry)


Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 180°C. Mix your halved cherry tomatoes along with your sliced spring onion and reserve to serve.

Washing Instruction

Wash your hands, cauliflower, cherry tomatoes and spring onion well. Rinse your coriander thoroughly and drain on paper towel.

Fats and oils are the number one transporters or infusers of flavour, so using them really helps getting flavours permeating. Use them to cook and you can remove excess fats and oil from your cooked ingredients by placing them on paper towel.

Step 1 - Parmesan Crisps

Place some baking parchment on an oven tray, alternately you can use a silicone oven mat if you have one. Sprinkle your grated parmesan onto it, evenly, and tightly together, pop this into your preheated oven for 4-5 minutes until your cheese is golden brown and crisp. Allow to cool slightly, remove your parmesan crisps with the aid of a thin egg lifter and then break into smaller pieces.

Step 2 - Lemon Rice

Cook your cauliflower rice in a large bowl with a dash of water, covered with a lid or clingwrap, in the microwave for 6-8 minutes until tender and cooked. Melt the butter in a saucepan and add garlic and cumin seeds and cook till fragrant on a low heat. Stir in the ,lemon zest and juice to taste, heat through, season with salt and pepper to taste and stir in the coriander and serve. You don't have to use all your lemon juice, just as a seasoning.

Step 3 - Tandoori Steak

Season your sirloin steaks with salt only. Heat a large frying pan over medium-high heat, once your pan is hot and just about smoking fry your steaks for 2-3 minutes on each side, then transfer to a chopping board. Now add your butter, once it froths add your sesame seeds and tandoori paste and mix through, add your steaks back to the pan, baste with your tandoori butter and remove your pan from the heat.

To Serve

Dress your halved cherry tomatoes and sliced spring onion with some olive oil, salt and pepper. Divide your lemon rice amongst your servings, top with your tandoori steak, cherry tomatoes and spring onion and sprinkle over your parmesan crisps.
