Method
Before You Begin
Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any pantry items. Preheat your oven to 220°C.
Washing Instruction
Wash your hands well. Wash your hands well. Rinse your swiss chard thoroughly and drain on paper towel. Brush your mushrooms with a soft basting brush or wipe with a clean kitchen towel. Never wash mushrooms they absorb water and will make your meal turn out watery.
Gino's Tip
You just want to lightly crush your sweet potatoes until they just about break apart.
Step 1 - Sweet Potatoes
Cook your sweet potato chunks in a large saucepan of salted water for 12-15 minutes until soft. Once soft, drain through a colander and lightly mash with a potato masher.
Step 2 - Greens and Crème Fraiche
Heat a large casserole pan over medium-high heat, add a drizzle of olive oil and fry your button mushrooms for 3-4 minutes until tender. Now add your swiss chard and continue cooking until your chard has wilted - transfer to a serving dish. Remove your pan from the stove and in the residual heat mix together your cream, crème fraiche, chicken stock, turmeric and boiling water. Add your cooked greens, chopped prawns and sliced calamari and transfer to a medium baking dish. Once your potatoes are lightly mashed, place them on top of your greens and fraiche mixture and sprinkle over your parmesan and crispy onions. Place in the oven and bake for 8-10 minutes until your cheese and potatoes are lightly browned.
To Serve
Divide your prawn and calamari fish pie amongst your servings.
