Gino's Tip

Hotpot - is derived from Lancashire hotpot, a stew originating from Lancashire in the North West of England. It consists of lamb or mutton and onion, topped with sliced potatoes and baked in a heavy pot on low heat. This is a quicker, easier recipe with all the sliced baked potato goodness.

Step 1 - Roasted Potatoes

Place your thinly sliced potatoes on an oven tray, drizzle with olive oil, salt and pepper. Pop into your preheated oven for 12-15 minutes until just about cooked and lightly browned. Loosen your potato slices with a thin egg lifter and reserve for later.

Step 2 - Meat Free Mash Hot Pot

Heat a large casserole pan over medium-high heat. Add a dash of olive oil and fry your herbivore mince for 4-5 minutes, transfer to a plate, add a drizzling of olive to your pan then fry your quartered button mushrooms for 3-4 minutes until browned and cooked. Transfer to your plate along with your mince and proceed to sweat off your diced onion and chopped garlic for 4-5 minutes until soft and translucent. Lastly, add your shredded swiss chard and cook for 2-3 minutes until wilted. Now add your mince and mushrooms back to the pan along with your vegetable stock, basil pesto, cream and sour cream. Heat your sauce through for 1-2 minutes, you can use some milk to thin your sauce slightly if it becomes too thick. Taste and season with salt and pepper. Transfer to a medium baking dish, fan your potato slices over your base. Brush your potato slices with your whisked egg and pop your pot pie into the oven on grill setting for 2-3 minutes until lightly browned and golden. Please keep a watchful eye on your pie as it singes quite easily if left unattended.
