Method
Before You Begin
Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out
Take out any “Pantry Items”. Preheat your oven to 220°C and take your DailyDish Spiced Mustard out, so that it can come to room temperature. Prepare three mixing bowls, one with your all-purpose flour, one with your whisked egg, and one with your panko breadcrumbs and parmesan combined. Season the contents of each bowl and reserve for later.
Washing Instructions
Wash your hands, green beans, baby potatoes, baby marrow, and spring onion well. Rinse your mint and baby spinach thoroughly and drain on paper towel.
Gino's Tip
Placing your crumbed ingredients on a wire rack in the oven will help with even cooking and browning. If you don't have one don't worry it will brown slightly more at the bottom.
Step 1 - Roasted Baby Potatoes, Garlic Beans and Courgettes
Toss your halved baby potatoes in a large mixing bowl with olive oil, salt, and pepper. Then place onto an oven tray and pop into the oven for 25-30 minutes.
Scatter your trimmed green beans and half-moon baby marrows on an oven tray, sprinkle over your crushed garlic, add a splash of olive oil, a seasoning of salt and pepper and mix your vegetables thoroughly. Pop into your preheated oven for 8-12 minutes until your vegetables are lightly browned and tender.
Step 2 - Creole Chicken and Minted Peas
Season your flattened chicken breasts with your DailyDish Spice Mix. Proceed to dust your chicken in your all-purpose flour, then your whisked egg and finally coating evenly in your panko breadcrumbs and parmesan mixture. Place your crumbed chicken breast on an oven tray. Meanwhile, heat a large frying pan over medium-high heat then add your spring onions, peas, a splash of water, and your butter. Continuously stir and lightly break up your peas with a wooden spoon for 3-4 minutes until your peas are soft and cooked. Finish by adding your sliced mint and seasoning with salt and pepper to taste.
To Serve
Dress your picked baby spinach with olive oil, salt, and pepper. Whisk your Daily Dish Spiced Mustard with a dash of water in a small mixing bowl, to loosen it up, divide your minted peas amongst your servings, top with your baby spinach, roasted baby potatoes, garlic beans, and baby marrows. Place your meat on top and drizzle with your DailyDish Spiced Mustard. Enjoy!
