Method
Before You Begin
Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 200C. Whisk together your mayonnaise, cream, and a few dashes of milk, chopped peppadews, and chopped oregano season with salt and pepper.
Prepare three mixing bowls, one with your all-purpose flour, one with your whisked egg, and one with panko breadcrumbs and grated parmesan mixed, be sure to season the contents of each bowl.
Washing Instruction
Wash your hands, plum tomatoes and courgette well. Rinse your origanum thoroughly and drain on paper towel.

Step 1 - Crispy Courgette Fries
Place a wire rack onto an oven tray.
Proceed to dust your courgette fries in flour, then your whisked egg and finally crumbing in your breadcrumbs and parmesan mixture.
Even pack them onto your wire rack oven tray and pop into the oven for 10-12 minutes until they are lightly browned and tender.
It's no biggy if you don't have a wire rack.
Step 2 - Grilled Ostrich and Toasted Ciabatta
Season your ostrich burgers with salt and pepper then rub with olive oil.
Heat a large grill pan over med-high heat, once your pan is hot and smoking, grill your burgers for 4 minutes on each side attaining a good char, transfer your burgers.
You can toast your rolls if you desire in the oven or in a pan.
TO SERVE
Divide your ciabatta roll bottoms amongst your servings, buttering them if need be, then top with your sliced plum tomatoes, picked wild rocket, drizzling over your dressing, and topping with your ostrich burgers. Serve with your crispy courgette fries.
