Solo: Charred Steak and Cheddar Cream

Cheddamelt steak is too die for and turning it up a notch with deliciously spiced roast butternut and edamame salad is just so worth it.

Ingredients to serve 1

  • 1 x Sirloin Steak
  • 100g x Butternut Chunks
  • 7.5ml x DD Spice Mix - za'atar
  • 50g x Edamame - take from freezer
  • 10g x Wild Rocket - long or thick stems removed
  • 100ml x DD Cheese Sauce
  • 5g x Grated Parmesan
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220C. Bring a medium saucepan of salted water to the boil for use in step 2.

Washing Instruction

Wash your hands well. Rinse your wild rocket thoroughly and drian on paper towel.

Gino's Tip

soft herbs are washed the best when submerged in a bowl of water so that the grit can sink to the bottom, be sure to remove the herbs from the water, this ensures that the dirt stays in the bowl. Use the water around the house for pot plants etc.

Step 1 - Za'atar Butternut

Toss your butternut chunks in a large mixing bowl along with salt, pepper, DD Spice Mix, and olive oil. Place on a foil-lined oven tray and pop into the oven for 15-18 minutes until lightly browned and tender.

Step 2 - Edamame Greens

Once your water in your medium saucepan has come to a boil, add your edamame and cook for 2-3 minutes, drain through a colander and run under cold water until cold, alternatively you could place the cooked beans in a bowl of water and ice blocks to cool quicker. Once your beans have cooled, toss in a bowl along with your picked wild rocket, season with salt, pepper, and toss with your grated parmesan before serving.

Step 3 - Cheddar Steak

Season your sirloin steaks with salt and pepper. Heat a large frying pan over high heat, once your pan starts smoking, sear your steaks for 2-3 minutes on each side then transfer to a plate. Allow your pan to cool slightly and reduce your heat to low, before warming through your DD Cheese Sauce, season to taste with salt and pepper.

Divide your za'atar butternut and edamame greens amongst your servings, serve with your seared steak topped with cheddar sauce.
