Creamy Paprika Pork Bake

A Paprikash-inspired pasta bake with a dash of difference, I'm sure you are familiar with; "basil pesto" nevertheless the two together are something else on the palette.




Ingredients to serve 2

  • 200g x Bacon
  • 5ml x Smoked Paprika
  • ½ x Onion - diced
  • 1 clove x Garlic - chopped
  • 150g x Button Mushrooms - sliced
  • 125g x Conchiglie Pasta
  • 60g x Mozzarella - grated
  • 30ml x Basil Pesto
  • 200ml x DD Cheese Sauce
  • 60ml x Tomato Puree
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

  • 400g x Bacon
  • 10ml x Smoked Paprika
  • 1 x Onion - diced
  • 2 cloves x Garlic - chopped
  • 300g x Button Mushrooms - sliced
  • 250g x Conchiglie Pasta
  • 120g x Mozzarella - grated
  • 60ml x Basil Pesto
  • 400ml x DD Cheese Sauce
  • 120ml x Tomato Puree
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Bring a large saucepan of salted water to the boil for use in Step 1.

When grilling in the oven its crucial to keep an eye on your bake, as once the cheese has melted it gratinate really quickly.

Step 1 - Conchiglie Pasta

Once your water in your large saucepan has come to the boil, cook your conchiglie pasta for 10-12 minutes until "al dente". Drain through a colander and set aside till later.

Step 2 -

Preheat your oven to grill. Heat a large frying pan over med-high heat, add a glug of olive oil and crisp your bacon for 3-4 minutes. Drain on a paper towel when done. Give your frying pan a quick clean and place it back on the stove over med-high heat. Add a glug or two of olive oil and brown your sliced button mushrooms for 3-5 minutes. If your pan isn't big enough, do them in batches. Overcrowding will only lengthen the cooking process and result in braised mushrooms. Now add your diced onions and chopped garlic. Cook until your onions are soft, about 2-3 minutes. Proceed to add your DailyDish Cheese Sauce and your smoked paprika, and cook for 3-4 minutes before mixing through your diced bacon and cooked conchiglie pasta. Taste and season with salt and pepper then transfer to a baking dish, sprinkle over your grated mozzarella, and pop into the oven, on the middle rack for 4-5 minutes. Your cheese will first melt then start gratinating you should lookout for a nice golden brown color.

TO SERVE

Divide your creamy pork bake amongst your servings along with your basil pesto.
