Bacon and Chickpea Moroccan Pasta

Unctuous spiced braised chickpeas in a Moroccan tomato sauce base mounted with fresh herbs and served with carb-free noodles.




Ingredients to serve 2

  • 200g x Diced Bacon
  • ½ x Onion - diced
  • 1 clove x Garlic - chopped
  • 1 tin x Chickpeas - drained and rinsed
  • 90g x DD Spice Mix - chickpeas
  • 100ml x Tomato Puree
  • 200g x Swiss Chard - shredded
  • 250g x Cauliflower Noodles
  • 5g x Italian Flat Leaf Parsley - chopped
  • Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)
  • Sugar/Sweetener (from your pantry)

  • 400g x Diced Bacon

  • 180g x DD Spice Mix - chickpeas
  • 200ml x Tomato Puree
  • 400g x Swiss Chard - shredded
  • 500g x Cauliflower Noodles
  • 10g x Italian Flat Leaf Parsley - chopped
  • Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)
  • Sugar/Sweetener (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out.Take out any “Pantry Items”.

Washing Instruction

Wash your hands well. Rinse the swiss chard and italian flat leaf parsley thoroughly and drain on paper towel.

Gino's Tip

When cooking tomato-based sauces I usually season lightly two to three times, once at the start and to taste at the end. When adding fattier meats like lamb or bacon (the fattier a sauce the more seasoning required, think cream sauces) I taste in the middle of cooking and season a little before the end. The most crucial part about this is always tasting before you season as if the seasoning has done its purpose you may omit the second and third seasonings.

Step 1 - Moroccan Pasta Base

Heat a large casserole pan over med-high heat, add a glug of olive oil and fry the bacon for 3-4 minutes before adding the diced onion and chopped garlic, reduce the heat to medium, cover with a lid and cook for 2-3 minutes. Now add the DD Spice Mix with a few dashes of water and allow to cook while stirring for 2-3 minutes, lastly add the tomato puree and shredded swiss chard and cook for 8-10 minutes. Keep an eye on the sauce as it's cooking, add more water if the sauce thickens, bubbles, and spits, remember cooking helps mellow out and develop the flavor. Taste for seasoning, balance with a bit of sugar or sweetener, once done, and mix through the chopped parsley.

Step 2 - Cauliflower Noodles

Heat the cauliflower noodles as per packaging instructions.

TO SERVE

Divide the noodles amongst your servings, top with your moroccan pasta base.
